Pecan Brown Sugar Bars

  • 1 cup all-purpose flour
  • 2 tablespoons all purpose flour
  • 1 1/2 cups firmly packed brown sugar, divided
  • 1/2 cup softened butter
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup flaked coconut
  • 1 teaspoon vanilla extract

Preparation
Combine 1 cup of flour and 1/2 cup of brown sugar. Add cut-up butter, and mix with food processor until crumbly.

Press into the bottom of a 9-inch square pan, and bake for 15 minutes at 350 degrees Fahrenheit.

Beat eggs with mixer for 2 minutes or until thick and pale. Stir in remaining sugar, 2 tablespoons flour, baking powder and salt, then add pecans, coconut and vanilla and mix well. Spoon into pan and bake for 30 minutes at 350.

Cut into bars.
