Oatmeal Apricot Squares
These light pastry squares combine an oatmeal crust with tangy apricot filling.

Ingredients
- 3/4 cup butter,
- 1 cup brown sugar,
- 1 1/2 cup flour,
- 1 tsp. salt,
- 1/2 tsp. baking soda,
- 1 1/2 cup quick rolled oats,
- 1 10-oz. jar apricot jam.
Preparation
Preheat oven to 400 degrees. Grease and flour 9x13 inch pan.
Mix butter and brown sugar together, and spread half of mixture in pan. Top with jam.
Sprinkle remaining mixture on top and pat lightly. Bake at 400 degrees for 20-25 minutes. Cool before cutting into squares.
