Not-So-Ordinary Shrimp and Grits
This is a new twist on a low country favorite..you will love it.

Ingredients
- 1 6 large Shrimp
- 3 Bacon strips
- 3 oz Stone Ground Grits
- 3 oz Chicken Stock
- 3 oz Sharp Cheddar Cheese
- Jalapeno (remove seeds)
- 1 Whole Orange
- 1 cup Sugar
- 1 cup Water
- 1 Red Pepper
- 1 Green Pepper
- ½ cup Horseradish
Preparation
Method for Shrimp & Grits
• Heat chicken stock to a boil, then add grits and cook 4-5 minutes. When stock is completely absorbed by grits add cheese and jalapeño and reserve for serving.
• Cut orange into chunks (rind and all) add water sugar and peppers.
• Bring to a simmer and cook for 20-25 minutes or until rind is soft.
• When cooked, place in a food processor and add
horseradish. Blend together leaving some chunkiness
and hold at room temperature.
• Cut bacon into 6 pieces.
• Wrap shrimp with bacon, pan sear until cooked all the way through.
• Layer grits in bowl, arrange shrimp and top with
marmalade.
