Migas (Mexican Scrambled Eggs)

Migas are a traditional Mexican breakfast dish. They are easy to make and delicious. You can serve them with sliced Avocado and Papitas Fritas (Fried potatoes or hash browns).

  • 8 large eggs lightly beaten
  • Approximately 8 oz restaurant style tortilla chips (lightly crushed)
  • 3-4 tablespoons (or more) finely diced jalapeno
  • 1 cup diced tomatoes (or several quartered grape tomatoes)
  • 2-3 green onions white and green parts thinly sliced (reserve some for garnish)
  • 2 tablespoon butter or oil
  • 1 cup shredded cheese (cheddar, jack, or Mexican blend)
  • A pinch of salt to taste

Preparation
Preparation
Melt butter in large non-stick skillet
Pour in eggs, using a spatula 'push' eggs and let uncooked eggs run onto pan surface. Continue until the eggs are fluffy but not quite done.

Add rest of ingredients.
Scramble to desired consistency, garnish with reserved green onions.

Serve immediately.

We serve them with Avocado slices, "papitas fritas" (fried potatoes), and tortillas (flour or corn).
