Mango and Peach Parfait
Light and refreshing start to the morning, frequently requested by guests!

Ingredients
- 2 ripe peaches, peeled, pitted
- 2 mangoes, peeled, pitted
- 2/3 cup sugar
- 4 Tbs. water
- 4 cups Greek or vanilla yogurt
- 8 Tbs. coconut, lightly toasted
Preparation
After peeling and pitting the fruit, cut into chucks.
Puree fruit until smooth, adding sugar and water.
Can be prepared ahead and refrigerated in an air tight container for up to one week.
Layer into desired glass 2 Tbs. of puree, top with 1/4 cup of yogurt, repeating layer with yogurt last.
Top with toasted coconut.
Variation: substitute fresh berries for one of the puree layers.
