  • ¾ cup almond butter
  • 1 ½ cup honey
  • 1 1/8 cup sliced, toasted almonds
  • 2 ¼ cups dried cranberries
  • ½ Tbs almond extract
  • 5 ¼ cups Kashi Puffs Cereal
  • 3/8 cup pumpkin seeds
  • 1 1/8 cup sunflower seeds

Coat a half-sheet pan (11” x 18”) with canola oil and line with parchment paper. Stir all dry ingredients in a mixing bowl. Heat honey until boiling. Boil for one full minute. To keep it from boiling over, use a large pot for boiling honey. Remove honey from heat, add almond extract and almond butter. Stir until smooth. Pour honey/almond butter mixture over dry ingredients and stir with paddle attachment at low speed until well-blended. Press mixture into sheet pan. Cover with another sheet of parchment paper and roll with rolling pin until firm and flat. (For less-chewy bars, remove top layer of parchment paper and place in 300F oven for 5 minutes.) Freeze for at least two hours and cut into 3.5 x 1.5 x .5” bars. Wrap individual bars in plastic wrap.
