Japanese Bars
Guest love this sweet so much that they have asked for it with breakfast before. Sweet creamy coconut, crunchy pecans and tart raisins make them irresistible.

Ingredients
- Crust:
- 1/3 c. butter
- 1/2 c. brown sugar
- 1 c. flour
- Filling:
- 2 eggs, beaten
- 1/3 c. butter, melted
- 1 c. white sugar
- 1 tsp. vanilla
- 1 Tbs. vinegar
- 1/2 c. chopped pecans
- 1/2 c. shredded coconut
- 1/2 c. raisins
Preparation
Crust:
Preheat oven to 350?. In food processor, using steel blade, blend together butter, sugar and flour until mixture resembles fine crumbs. Press mixture over the bottom of a greased 8-by-8-inch pan. Bake at 350? for 10 minutes. Let cool for 10 minutes.
Filling:
In medium mixing bowl combine eggs, butter, sugar, vanilla and vinegar. Beat until smooth. Stir in pecans, coconut and raisins. Pour into pre-baked crust.
Bake for 40 minutes. Cool before serving.
