Irish Soda Muffins

These muffins are great for St. Patrick's Day, but they are great any day of the year. If you love soda bread you will love these muffins.

  • 1 1/2 cups unbleached all purpose flour
  • 3/4 cup white whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup granulated sugar
  • 1 1/2 cups currants
  • 1/2 to 2 teaspoons caraway seeds, to taste
  • 1 large egg
  • 1 cup buttermilk
  • 6 tablespoons butter, melted
  • sparkling white sugar for topping

1) Preheat oven to 400 degrees. Lightly grease muffin pan (12 count).
2) In a medium size bowl whisk together the flours, baking powder, baking soda, salt, sugar, currants and caraway seeds.
3) In a separate bowl whisk together the egg, buttermilk and melted butter.
4) Quickly combine the dry and wet ingredients; stirring until just mixed. Do not over-mix as this will make the muffins tough.
5) Spoon batter into prepared muffin pan, filling cups about 3/4 full.
6) Top with sparkling white sugar.
7) Bake for 20 minutes or until a toothpick inserted into center comes out clean.
8) Let cool in pan for 5 minutes.
9) Remove immediately and cool on a wire rack.
