Inn on Randolph Quinoa Cakes with Garlic Lemon Aioli

  • 3 C Cooked Quinoa
  • 2/3 C grated Mozzarella or Gruyere or Fontina
  • 2/3 C Shaved Parmesan
  • 4 green onions, chopped
  • 3 eggs, lightly beaten
  • 3 tsp. pepper
  • Salt to taste
  • 5 T. Olive Oil for cooking
  • For the Aioli:
  • 1 C Mayonnaise
  • 3 clove minced garlic
  • Juice and zest of 1 lemon
  • ½ tsp cayenne pepper

Preparation
For the cakes:

Place all ingredients (except oil) in a bowl and stir together until well mixed
Pour olive oil in a large sauté pan and place over medium heat.
Form small patties with the quinoa mixture and place in the heated pan. (This will have to be done in batches)
Cook cakes for about 4 minutes on each side. Repeat with remaining patties. Set Aside.

For the Aioli:

Place all Aioli ingredients in a food processor and blend until smooth. (This can also be done by hand.) Season with salt and pepper if necessary.
Serve a small dollop on top of the cakes, or pour into a small bowl and serve on the side.
