  • 4 cups rolled oats
  • 1 cup shaved unsweetened coconut
  • 1 cup sliced almonds
  • 1 cup pecans
  • 1 1/2 t cinnamon
  • 1 1/2 t fresh nutmeg
  • 1 stick unsalted butter
  • 1/2 cup honey
  • 2 cups mixed dried fruit
  • i.e. cranberries, cherries, currants, raisins, apricots, prunes or dates.

Preparation
Preheat oven to 350 degrees. In a large bowl combine all DRY ingredients except dried fruit. Melt butter and honey together in small saucepan over low heat. Pour over dry ingredients and stir well.

Spread granola in 2 shallow baking pans and bake, stirring frequently, rotating positions in oven halfway through. Bake until golden brown. About 30 minutes.

Combine granola with dried fruit and allow to cool. Granola keeps in airtight container for one month.
