Grilled Portobello Mushroom

  • 1 pint Peanut oil or vegetable oil
  • 1 tablespoon Chopped fresh garlic
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1/2 teaspoon liquid smoke flavoring
  • 1 tablespoon salt
  • 1 1/2 teaspoons worcestershire sauce
  • 6 portobello mushrooms
  • 1 cup balsamic vinegar
  • 1/4 cup sugar
  • 1/2 cup peanut or vegetable oil
  • 1 tablespoon chopped green onions
  • 2 Roma tomato's, diced

Preparation
Preparation
1.Combine the first 7 ingredients with a whisk in a food processor or in a large bowl.

2.Wipe mushrooms and remove stems; Lay flat in shallow pan.

3.Pour peanut oil marinade over mushrooms. Marinate, covered, for 30 minutes to 1 hour in the refrigerator. Drain the mushrooms.

4.Grill the mushrooms on charcoal or gas grill for about 5 minutes or until tender. Be careful as they will flame up when you place them on the grill.

5.Wisk together balsamic vinegar, sugar and 1/2 cup oil for vinaigrette. Add the green onions and tomatoes.

6.To serve, place grilled mushrooms on a serving plate. Top with vinaigrette. Garnish with additional green onions if needed.
