Green Chiles Eggs

Ingredients
- 8 oz. cheese—we generally use Monterey Jack or Pepper Jack but one could also use a mix of white cheeses including white cheddar or a Fiesta Cheese Blend.
- 2 cups cottage cheese
- ¼ cup flour
- 1 tsp. baking powder
- 1 stick butter
- 6 eggs beaten
- 4 - 4.5 oz. can of chopped green chiles—your choice as to amount of heat
Preparation
Preheat oven to 350 degrees
Melt butter, mix in flour and baking powder
Mix all other ingredients with the flour mixture
Spray a 9 x 13 baking pan with Pam
Pour mixture into 9 x 12 baking pan and bake for 40 minutes or until it is golden brown and set in the center.
Note: This dish should rest 5 – 10 minutes before serving.
Recipe can be cut in half and baked in a pie pan. Reduce baking time to 25 – 30 min.
Serving suggestions: Place ham and/or sausage on plate & garnish w/ fruit and/or fresh herbs.
