Grandma Grinsfelder’s Leibkuchen Cookies
This is a favorite recipe used at past cookie baking classes at the Inn at Cedar Falls. The recipe came from Innkeeper Ellen Grinsfelder’s German grandmother. These cookies are simple to make, and it is a fun recipe to try with children.

Ingredients
- 4 eggs
- 1 lb. dark brown sugar
- 2 cups flour
- 1 cup raisins
- 2 1/3 Tbs. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. allspice
- 1/4 tsp. nutmeg
- 1 cup powdered sugar
- 1 Tbs. lemon juice
Preparation
Preheat oven to 300°F. Mix eggs and sugar. Add all other ingredients except powdered sugar and lemon juice.
Spread and bake in a greased jellyroll pan for 20-30 minutes until lightly browned.
Combine powdered sugar and lemon juice to make icing. Ice while warm.
