Grand Marnier French Toast with Warm Berry Compote
This version of french toast is a show-stopper, especially using all the amazing seasonal fruit we have available in Southwest Michigan.

Ingredients
- French Toast
- 8 eggs-1 egg per serving
- 1 C milk-1/8
- 2 T Grand Manier
- 1 ½ t vanilla extract
- 1/2 C orange juice-Total
- 1/4C per serving
- Juice and Grated Zest of 2 more Oranges
- ¼ t Ground Cinnamon
- ¼ t Ground Cardamom
- 8 slices bread, 1 inch thick
- Compote
- 1 C fresh orange juice
- 1 C sugar
- ½ C spiced dark rum
- 2T cornstarch
- 2 T water
- 6 C fresh or thawed berries
Preparation
Compote
1. Bring OJ, sugar, and rum to boil. Add cornstarch and water slurry and boil till slightly thickened, about one minute.
2. Add berries and heat over low heat for about 3 minutes, till berries soften and are heated through.
French Toast
1.Mix all ingredients except bread and transfer to baking dish
2.Soak bread in egg mixture an turn occasionally to coat until mostly absorbed, at least 5 min but may be as long as 15 minutes.
3.Cook on griddle.
