  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. ground ginger
  • 1/2 tsp. ground nutmeg(Fresh is best)
  • 1/4 tsp. ground cloves
  • 3 large eggs
  • 1/4 cup packed dark brown sugar
  • 1/2 cup well shaken buttermilk(not skim)
  • 1/2 cup water
  • 1/4 cup fresh brewed coffee(not espresso)
  • 3/4 stick melted butter

Preparation
Whisk together all dry ingredients except sugar.
Whisk the eggs with the coffee and brown sugar til smooth, then add the rest of the wet ingredients except the butter.
Add wet to dry then add the butter last, after all is incorporated.
Spoon batter onto preheated griddle brushed with oil to prevent sticking. Keep warm until serving wrapped in foil in low oven. Layer pancakes with whipped cream and drizzle with caramel and pecans dust with powdered sugar
