Coombs Southern Strata
Our special signature breakfast dish is similar to Quiche. "Stratas" are baked daily with eggs, 2 cheeses (Monterey Jack & cheddar), potatoes, cream, & a variety of extras, such as bacon, ham, sausage, sun-dried tomatoes, yellow peppers, black olives, artichokes & more! Yummy! They are different every day.

Ingredients
- 8 eggs, slightly beaten
- 6 slices bread
- 2 cups cream (substitute milk for a lighter calorie if preferred)
- 1 cup cheddar cheese, grated
- 1 pound Jimmy Dean sausage
- 1 bag of shredded hash browns
- 1 tsp. salt
- 1 tsp. dry mustard
- 1/2 cup roasted sweet red peppers
Preparation
Cook sausage in pan and drain. Combine eggs, milk, cheese, sausage, peppers, salt and mustard. Spray 9 x 12 inch pan with cooking spray. Cover bottom of pan with bread slices and pour mixture over bread. Bake at 350 degrees for 35 to 40 minutes. Serve warm. Can make the night before and refrigerate.
Additional Notes: You can add other types of ingredients as desired. For instance, you can layer fresh baby spinach leaves over the sausage, or you can leave out the sausage and add ham instead. Forget the meat altogether and alternate spinach, cut up red and yellow bell peppers and sun-dried tomatoes with black olives.
