Chocolate Crackle Cookies

  • 8 T unsalted butter
  • 4 oz unsweetened chocolate, chopped into small pieces
  • 2 cups all purpose flour
  • 2 t baking powder
  • 1/4 t salt
  • 2 large eggs
  • 1/2 cup milk or buttermilk
  • 2 cups sugar
  • 1 t vanilla
  • Confectioners sugar

Melt unsalted butter and remove from heat stir in chopped chocolate. In a medium bowl sift all purpose flour, baking powder and salt together. Set aside. In a large bowl whisk together eggs, milk/buttermilk and vanilla. gradually whisk in sugar. Whisk in chocolate mixture and then fold in flour mixture until just blended. Cover and chill in refridgerator for at least 4 hours.
Preheat oven to 350 degrees. Put 1 C confectionars sugar in shallow bowl. Scoop small balls of dough and roll into sugar making sure each is thickly covered. Place on parchment or foil lined sheet pan. Bake 12-15 minutes. Make sure dough is still cold when they go in the oven.
