This delicious egg puff can be prepared the night before. Remove from refrigerator an hour before to bring to room temperature before baking.

  • 1 cup of mild salsa
  • 1 cup shredded colby/monterey jack cheese
  • 6 eggs
  • 1/2 cup cottage cheese
  • 1/2 cup sour cream
  • salt & pepper

Preparation
Preheat oven to 350 degrees
Lightly spray a 9 inch pie plate
Spread the salsa on the bottom
Top with the shredded cheese
Mix together the remaining ingredients and pour on top of cheese
Bake for 35 - 40 minutes until puffed and golden.
Let rest for 5 minutes before slicing
