Caramel Butter Shortbread

  • 1 stick of butter, softened (for crust)
  • 1 box of “Butter Recipe” cake mix
  • 1 stick of butter, softened (for filling)
  • 1# box of confectioners sugar
  • 1 package of cream cheese, softened
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup of finely chopped pecans

Preheat oven to 350o Fahrenheit.

Combine butter cake mix and 1 stick of butter. Press into the bottom of a well greased 9” x 13” pan.

Combine 1 stick of butter, 1 box of confectioners sugar, 1 package of softened cream cheese, 2 eggs, 1 tsp. of vanilla and cup of pecans. Mix well and pour over crust.

Cook for approximately 45 minutes or until bars are just slightly brown toward the middle of the pan and golden brown on the edges.

Allow to cool. When still slightly warm, run knife around sides of pan to loosen. When completely cool, cut into bars. I usually do at least 24 per pan because they are sooooooo rich.

Can be made by hand but use Cuisinart if available. If so, stir pecans in after blending filling ingredients.
