Brampton Inn Dutch Babies
One of the easiest sweet breakfast options we offer at the inn. Our guests always request the recipe for this pretty dish.

Prep Time : 1 hour Yield : 6 puffed pancakes |
Ingredients
- 1 cup whole milk
- 4 lg. eggs
- ½ tsp. salt
- 1 cup unbleached flour
- 3 Tbs. unsalted butter
Preparation
Preheat oven to 450 degrees.
In a large bowl whisk together milk, eggs and salt.
Sprinkle flour over milk mixture and whisk vigorously.
Refrigerate for 30 min.
Spray 6 ramekin dishes with pan coating such as PAM.
Add half a tablespoon of butter to each dish and put into the hot oven for 2 min.
Butter should be melted and hot, without getting brown.
Add 1/3 cup of batter to each ramekin and bake for 10 to 12 min. until puffed with golden brown edges.
Remove from dishes and plate.
Sprinkle with powdered sugar and/or top with a favorite fruit topping such as sautéed apples, lightly sweetened fresh strawberries, blueberries or peaches.
Serve immediately with a small pitcher of warm maple syrup.
