Blackberry Crumb Cake

When blackberries are in season, this cake is a winner. Serve for dessert or smaller slices with breakfast and a side of fresh fruit.

  • CAKE
  • 1/2 c. cold unsalted butter, cut into pieces
  • 2 c. flour
  • 1 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. coarse salt
  • 1/2 tsp. cinnamon
  • 2 eggs
  • 1 c. whole milk
  • 1 tsp. vanilla
  • about 3 1/2 c. fresh blackberries
  • CRUMB TOPPING
  • 1/2 c. pecans or walnuts
  • 1/3 c. brown sugar
  • 1/4 c. flour
  • 2 T. cold unsalted butter

Make the Crumb topping
In a food processor, pulse all the ingredients until crumbly.
Transfer to a bowl and set aside.

Make the Cake
Butter an 8-inch square baking pan.
In the food processor, pulse the butter, flour, sugar, baking powder, salt and cinnamon until crumbly.
In a large bowl, whisk together the eggs, milk and vanilla.
Add the flour mixture and mix just until combined.

Transfer the cake batter to prepared pan.
Sprinkle with the blackberries and crumb topping.

Bake about 55 - 60 minutes.

Let cool and enjoy.
