Best Split Pea
As soon as you try this, you will know why we call is BEST split pea.

Ingredients
- 3 cups green split peas
- 5 cups water
- 1 bay leaf
- 2 tsp. salt
- 2 Tbs. oil
- 1 cup minced onion
- 3 cloves crushed garlic
- 1 cup minced celery
- 1 small thinly sliced potato
- 2 cups sliced carrots
- 1/4 cup dry red wine
- 1/4 tsp. dry mustard
- 1/4 tsp. thyme
- 3 Tbs. vinegar
- 1 cup chopped tomato
- 1/4 cup chopped parsley
Preparation
In a large pot simmer together:
split peas, water, bay leaf and salt.
Simmer uncovered, 3-4 hours. Remove bay leaf.
In a large pan saute:
Add oil, minced onion, crushed garlic, minced celery, sliced potato, sliced carrots and saute 5 min. Add to split peas.
Add about 15 minutes before serving add:
red wine, dry mustard, vinegar, tomato and parsley
