Basil Cornbread

| Yield : one loaf or 9" round pan |
Ingredients
- 3/4 cup cornmeal
- 1 cup flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3 Tsp. brown sugar
- 1 egg
- 2 Tsp. melted butter
- 1 1/4 cup buttermilk
- 1/4 cup chopped fresh basil leaves
Preparation
Preheat oven to 425 degrees.
Mix cornmeal, flour, baking powder, baking soda, salt and brown sugar in one bowl.
In another bowl beat the egg, add the buttermilk, and melted butter, mix well Stir in the basil.
Add the dry ingredients to the wet ingredients, mix well.
Pour the batter into a greased loaf pan or 9" round cake pan.
Bake in a preheated oven for 20 minutes, or until a skewer or knife comes out clean.
The loaf may need to bake slightly longer in the loaf pan than the round pan.
