Banana Granola Pancakes

While out for breakfast on a vacation, we ordered a delicious banana pancake. I decided to try to duplicate it at the Inn and was successful. Our guests love the tasty pancake served with real maple syrup.

  • 2 c. flour
  • 2 T. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 2 c. whole milk buttermilk
  • 3 T. butter, melted and cooled
  • A couple of bananas, thinly sliced
  • Granola as needed

Preparation
Preparation
Combine all dry ingredients and mix thoroughly.
Combine eggs and buttermilk.
Add the melted butter and mix gently until just combined.

Heat your lightly greased griddle.
Pour about 1/4 cup of batter onto hot griddle.
Immediately top the pancake with the sliced bananas and sprinkle on the granola.
Cook until lightly browned on both sides.
