  • 6 cups diced apples
  • 5 cups sugar
  • 2 1/2 cups vegetable oil
  • 8 eggs
  • 2 Tbs. vanilla
  • 6 cups flour
  • 4 tsp. cinnamon
  • 3 tsp. salt
  • 3 tsp. baking soda
  • 2 tsp. cloves
  • 1 tsp. ginger
  • 1 tsp. baking powder
  • 2/3 cup raisins

Grease and flour 4 loaf pans.
Beat the diced apples, sugar, vegetable oil, eggs and vanilla with electric mixer until mixed & fluffy.
Sift together flour, cinnamon, salt, baking soda, cloves, ginger and baking powder in separate bowl.
Now add wet mixture to dry mixture with raisins & stir until moist.
Bake 1 hour at 350 degrees.
Test with cake tester in center. Should be clean. If not, bake 10 minutes more & retest. Freezes well - can be microwaveb to reheat & serve.
