Apple Crisp Muffins

Ingredients
- Batter:
- 2 3/4 cup flour
- 3/4 cup old-fashioned oats
- 1/4 Tbs. cinnamon
- 1/4 cup butter, melted
- 1 1/2 cup milk
- 1/2 tsp. baking soda
- 1 Tbs. baking powder
- 3 eggs
- 1/2 cup brown sugar
- 1/2 tsp. allspice
- 1/2 cup sugar
- 1/4 tsp. salt
- Topping:
- 2 to 3 Apples (30 1/4" slices)
- 1/4 tsp. cinnamon
- 1/4 tsp. allspice
- sugar in the raw
Preparation
Mix together topping by hand, cover and refrigerate. Combine flour, oats, sugars, baking powder, cinnamon, allspice, baking soda and salt in a large bowl. Cover and set aside. In a separate bowl, beat eggs into melted butter. Add milk and mix well. Cover and refrigerate.
In the morning, stir wet ingredients into dry ingredients until just moistened. Spoon into oiled muffin tins and top each with two slices of apple. Press apple slices lightly into batter. Sprinkle with sugar in the raw and bake in 350 degree oven for 20 minutes or until a toothpick comes out clean.
