Apple Butter Streusel Muffins
When it's Apple season in the North Georgia Mountains we enjoy fresh apples and also apple butter from nearby Chattooga Belle Farm. Here's a great apple muffin recipe:

Ingredients

- Muffins:
- 1 3/4 cups all-purpose flour
- 1/3 cup sugar
- 2 tsps baking powder
- ½ tsp baking soda
- 1/4 teaspoon salt
- 2 eggs beaten
- 3/4 cup Chattooga Belle Farm Apple Butter
- 1 tart apple Granny Smith), peeled, cored and finely diced
- 1 teaspoon vanilla extract
- ½ tsp ground cinnamon
- 4 ounces melted butter
- Several tablespoons buttermilk
- Streusel:
- 1/3 cup firmly packed brown sugar
- 3 tablespoons all-purpose flour
- 2 tsps ground cinnamon
- 2 tablespoons butter, softened
Preparation
1. Preheat the oven to 400F
2. Grease and flour a 12-cup muffin pan or line the pan with paper baking cups
3. To prepare the topping, stir together the brown sugar, flour, and cinnamon in a small bowl
4. Mix in the butter with a fork or pastry blender until the mixture is crumbly. Set aside
5. To make the muffins, stir together the flour, sugar, baking soda/powder, and salt in a medium bowl. Set aside
6. Stir together the egg, apple butter, diced apple, cinnamon, vanilla extract, and melted butter in a small bowl until well blended
7. Add to the flour mixture and stir until just moistened; if needed add up several tablespoons buttermilk to make a texture suitable for spooning into muffin cups
8. Fill each muffin cup about 2/3 full
9. Sprinkle with 1 tsp of the topping and pat down with fingertips
11. Bake for about 16-18 minutes, until golden brown and a toothpick comes out clean
12. Remove from the pan, and cool briefly on wire racks
